Instructions to make Mango Cheese cake:
- Mango puree:- Grind the mangoes to smooth puree without adding water. Add 1/2 tbsp sugar and mix well. Cook on medium flame until it starts bubbling. Remove from flame and cool completely.
- To make biscuit base:- Grind biscuits in a processor. Add melted butter and combined well. Transfer to a 4* loose bottom cake mold with the help of a spoon. Press it nice and tight. Refrigerate it for 30 minutes.
- To make the cheesecake:- In a bowl combine cream cheese and caster sugar mango essence and mango puree. whisk it well until well combined and lump-free.
- Add the the whipped cream little by little and mix it.
- Bloom 2 tsp gelatin powder with 2 tbsp water, wait for 5 minutes, and microwave for 15 sec. Mix well to make sure the gelatin completely dissolved.
- Then pour into the cream cheese mixture and mix well. Then pour it into the prepared mold on the biscuit base and cover it and refrigerate it for 1 hrs.
- πΈTo make Mango jelly for topping:- Bloom 1.5 tsp gelatin powder with 60 ml cold water wait for 5 minutes and microwave for 15 sec. It is dissolved completely.
- Add it with 3/4 cup mango puree and mix again to combine. Pour the gelatin mixture gently on the top of the cheesecake. Cover it and chill for 3 hrs.
- Use a hot towel to unmold. Wait about 10 sec and unmold the cheesecake. Mango cheesecake is ready.
