The ingredients needed to make Quick and Easy Sweet Potato Dessert:
  1. Prepare 400 grams Sweet potato
  2. Make ready 40 grams Soft light brown sugar
  3. Make ready 2 tbsp Soy milk (milk is OK too)
  4. Make ready 20 grams Butter (optional)
  5. Take 1 dash Vanilla extract (optional)
  6. Prepare 1/2 Egg yolk (for glazing)
Steps to make Quick and Easy Sweet Potato Dessert:
  1. Peel the sweet potato, cut into slices, and soak in water. (I tried to make my slices thinner than 1 cm in width.)
  2. Boil in a pot until it becomes soft.
  3. When it becomes soft, drain the water. Add the butter while it's still hot, and mash.
  4. I mash until it's still a little bit lumpy, but please adjust it to your liking.
  5. Add the soft light brown sugar, and soy milk, then mix well.
  6. Divide into 8 portions, and shape them. Place on a baking sheet or in muffin cups, and brush their surfaces with the egg yolk.
  7. Bake in the toaster oven for 15-20 minutes. (They brown differently depending on where they are positioned, so please switch their positions around half way through.)
  8. You can increase the amount of soy milk (or milk) to make the batter soft, and squeeze it out from an icing bag. These are also delicious! Make them creamier by adding heavy cream.
  9. Ready to serve and ENJOY!
